BACON PINEAPPLE RINGS
Take some pineapple rings, bacon strips, sweet yellow onions and cheese sticks, wrap it all together and you get one of the tastiest little appetizers you are ever going to eat! Do you love to entertain family and friends? Are you always on the lookout for that one great tasting appetizer that no one has made yet? This combination of foods are sure to be a successful addition to your families list of favorites. Choose nice big sweet yellow onions when you are making this as they need to be large enough to match the size of the pineapple rings. There are so many types of bacon on the market. Be sure to choose a bacon that is thinly sliced so it will brown and crisp up more quickly than a thick sliced version. This recipe calls for canned pineapple, but if you have access to a nice fresh pineapple and know how to peel and core the pineapple so you can make you own rings, that is another food experience unto itself! This recipe calls for mozzarella string cheese sticks, but you could also get some thinly sliced mozzarella from the deli and slice it into thin strips yourself. A good cooking tip if you are not using your outdoor grill and want to make these in the oven is to line a baking sheet with aluminum foil, then place a wire baking rack into the pre-lined baking sheet. Place the bacon pineapple rings on top, leaving space between then put into your preheated oven. By lining the pan and using a wire rack it will make for less mess in the oven.
16-24 slices of bacon
1 can of sliced pineapple rings (need 8 rings)
8 mozzarella string cheese sticks
2-3 large sweet yellow onion, cut into 1/3 inch rings
