It was pretty common to put raw eggs into smoothies and to make banana split cakes with a raw egg in the creamy filling. Salmonella poisoning from raw eggs is why so many people no longer will consume them until they are cooked. It is recommended by the American Egg Board that we don't eat eggs in their raw format.

As with everything these days, our food is not grown as it was 50 years ago. Chickens are not necessarily even raised on farms. Mostly they are raised and live their entire lives in small cages. We don't know what goes into what the chickens are eating or how humane their living conditions are. Organic free range eggs and chickens at least have exposure to sunshine and their feet touching the ground. Although the chances of salmonella from raw eggs are extremely low, it is still to be avoided.

Substitutions for raw eggs in the recipes that require them would be a pasteurized liquid egg substitute that offers a close resemblance to an egg. Egg white powder with water is also a safe substitute. You can also use ground flax seed mixed with water. There is no way to tell if an egg has bacteria or not by looking at it. Never eat an egg if the shell is broken or cracked in the carton. As soon as an egg reaches 140 degrees when you are cooking it, all bacteria is killed.
