Italian cooking has developed and changed through hundreds of years. Italian cuisine is known for its regional diversity. It is known for its simplicity, with several dishes cooked with only four to eight ingredients. Italian chefs rely on these main ingredients, with the ingredients in dishes varying by region. Cheese and wine play a major role in Italian cuisine, along with coffee (especially espresso) also being popular to Italian cuisine. Italian cuisine has a large variety of ingredients which are used that again vary by region. Some popular ingredients used are fish, potatos, rice, corn, sausages, pork and cheeses, basil, nuts, olive oil, prosciutto, salami, truffles, parmigano region and tomatoes, garlic, artichokes, oranges, ricotta cheese, eggplants, anchovies, sardines, tuna and capers.
Italian cuisine is known for its use of pasta, that comes in a variety of lengths, widths and shapes. Some popular names of pasta can include penne, spaghetti, linguine, fusilli, capellini, spaghettini, cannelloni, manicotti, rotini, farfelle, rootlet, rotini and lasagna. Some popular Italian recipes can include pesto, minestrone, ciabatta, pizza, carbonara, fettuccine alfredo, ziti, ravioli, linguini with clam sauce, tortellini with ricotta and spinach, risotto and cacciatore. These are just a sliver of Italian recipes, there are just to many to list, if you look at each region individually you will see the main ingredients used and how that reflects in their cuisine.
