When Life Throws You Lemons – Make These Irresistible Lemon Drop Cookies
This little lemon drops cookie recipe will be the hit of any dessert table it sits on. The cookie recipe is so easy to do, making about 75 little cupcakes, great for large groups. Or you can always just make the recipe enjoy at home, and freeze the rest for later. This lemon drop cookie recipe is addictive, once you have one it's hard not to try another! The ingredients you will need for this cookie recipe include lemon cake mix, instant vanilla pudding mix, eggs, sour cream (or a mix of half sour cream and half vanilla yogurt), and milk.
To start, preheat the oven to 325 degrees Fahrenheit. Then coat a mini muffin tin with some non-stick cooking spray. Then beat the ingredients in a large mixing bowl with an electric mixer for several minutes until well blended and smooth. Then fill each muffin space about half way full. You can use a small cookie scoop to put the cookie mixture in the muffin tin. Then bake for approximately 12 minutes or until a toothpick inserted into the center comes out clean. Then cool the muffin pan on a wire rack for about two minutes and then turn the muffin tin over on a wire rack so that all the muffins come out. Then cool completely and once all the cookie batter is cooked, you can make the lemon glaze recipe.
The ingredients you will need for the lemon glaze recipe include powdered sugar, grated lemon zest, melted unsalted butter, fresh lemon juice, and hot water. Then put the wire racks over waxed paper. The beat the lemon glaze ingredients in a medium sized bowl until smooth. Then dip the muffins in the lemon glaze to coat the bottoms, which are now the tops of the muffins. Then let the lemon glaze run down the sides and let the excess drip off back into the bowl. Then place each lemon drop cookie back on the wire racks until the glaze is set. Make sure that you try a few for yourself before putting them out for others to enjoy, as these will go fast.
